This is the “winter” lemon we know, mainly yellow in color, although the fruit only turns completely yellow from the second half of December onwards. We are wary of seeing yellow fruit as early as October or November: this is due to artificial ripening, which is demanded by the market but which we advise against, as we want consumers to be educated to buy natural products.
Initially, it has a light green color, which gradually fades over time until it reaches a uniform yellow. It has an elliptical shape, smooth peel, and a high quantity of essential oils, which are highly prized by the perfume and cosmetics industries. The juice of the Primofiore lemon is citrine yellow in color, with a yield of no less than 34% and an acidity of no less than 6%
